10-lbs
SOooooo. I lost 10 lbs and I am totally not deprived of anything!! If I have a craving for something I will usually eat it or find a better substitute. It is usually my sweet tooth. But since I get horrible headaches from sugar now, I am more careful about eating it. I have had to eat out a few times while working with Stewart this week. Did you know that Subway now has a veggie patty sub? Pretty tasty. I like the the regular veggie sub just the same though. Lemon-asparagus Risotto and pine-nut crusted gardein for dinner the other night. It was so creamy and tasty. I feel satisfied. Never hungry, never deprived and a lot less bloated. Also, happier. Still have tired days that I'm sure have to do with some crap that I have eaten, but happier!! I honestly haven't missed meat. I have it occasionally. Dairy I have rarely and I LOVE cheese!!! I don't miss it as much as I thought. I have chickens and now they seem kinda useless...anyone need eggs?

Sugar!
It's been 10 days since my last blog...oops! Well, I have definitely found the culprit for my tiredness and blah-ness. It also gives me headaches! SUGAR!! Yep, it's all true about our sweet little devil. It is addictive and it treats you like CRAP! I would have a soda now and again if I was out and boy did I feel worse. Then you crave more sugar and the more you feed it the more tired you are and the more you crave it!! Vicious cycle. At least I have nailed it down. I still make pretty much all my meals vegan. Very rarely do I use eggs or cheese or any dairy for that matter. My kids get it a little more than I do. I made a yummy Vegan stir-fry with Tofu and Stew ate leftovers! Tofu...and Stew...more than once...lol! YES!! My battle this week has been the sugar bug which I am going to kick out the door once again...It is NOT your friend no matter how delicious and sweet and harmless it seems!

I have noticed a difference. I feel happier. I am still tired, but watching 6 kids and the baby isn't sleeping very much isn't helping. But I am getting more done and feeling my mood is just better in general. I have been juicing my wheat grass and all the leftover veggies from my dinners. I would have to say I am using things I have never before. My body is probably happy! Was out all night and ate In-n-out...dumb...dumb me. It did not stay in my stomach too long. tummy ache! LOL sorry for too much info. I am not a vegan, I am on a whole-foods kick and strive to be healthier and happier that way!

verdict is in...Gardein is very good! Stew AND the kids even thought it was chicken. He also LOVED the rollatini, which any of you that know him he wouldn't touch Ricotta with a 10' pole, let alone tofu. It was a mock Ricotta made with tofu as the filling of the beets and he ate a lot of them. He even wanted more!! That is a shocker. For dinner: Udon noodle cakes with Gardein and shitake mushroom sauce and pea shoots. My noodles didn't stick together, but were still good and I hate pea shoots. Stewart loved the whole dish! This is weird...good...but weird!!
Tempura Beet Rollatini
Ok. Normally I would post at night, but I couldn't wait to share how surprisingly awesome Tempura beet rollatini is. I wanted to try it but I didn't know it would be so good!!!!!

Also, had a good workout with Jillian's 30-day shred and a yummy shot of fresh grown wheatgrass juice to start my day!

I didn't do great this weekend, BUT I have noticed I reach for water more and junk food less. AWESOME!
On the menu tonight was Paella with "sausage", nori dusted oyster mushrooms and wine-braised artichoke hearts.
Dessert: Tapioca pudding.
It was NOT a quick meal. However I really enjoyed preparing it. I feel very satisfied and yet I am not heavy or lethargic. This is a beautiful thing.
I am growing wheatgrass. Super easy and fast. I will be juicing in 2 days. I should have started more. Maybe a tray every other day. For all those that have food storage. Wheat is a staple and you can put it to very good use this way!!!

K- I told you I am not very good at this blog thing. On Wednesday I went to the movies and drank a coke......I didn't sleep ALL night...no joke not one wink! That NeVer happens. It has only been a few days. Crazy! I have been doing mostly good. Some chicken and a sausage(I am paying for with a tummy ache now). A little butter here and there. It is crazy how much meat we really eat. Look at what you eat and tell me if there is a meal without dairy or meat. I guess I never really paid attention that closely. It is a struggle as every change is and I am not going to be perfect but I am becoming more aware of what I am putting in my body and if I have to have something bad then I do but I find it not to be very appealing when I eat it; and now I only want to have a tiny bit.
I made sugar-free, dairy free brownies and they were yummy fresh but a day old- not so good.
I could not fool my kids with tofu scramble. They wouldn't touch it. Except Sophey.....she LOVED it! Jeryn only liked mine which had tomatoes, mushrooms and onions. GO figure!
It's weird when you go without for even a couple of days, you feel the difference when you re-introduce them to your stomach. It does not make you happy! Hopefully I will learn from this. However, I am sure that I will share the same lesson re-learned over and over again.
